Chocolate Whisky Flambe Cake
Ingredients (1 lb/6 inch cake mould):
- 1 cup/200 gm sugar
- 1 cup/220 gm milk
- 1 tbsp/15 gm vinegar
- 6 tbsp/65 gm oil
- 1 tsp/6 gm baking soda
- 1.5 cups/210 gm flour/maida
- ¼ cup/20 gm cocoa powder
- 1 cup/200 gm dark chocolate
- ¾ cup/150 gm cream
Method:
- For the sponge, mix sugar and milk. Add oil, vanilla, vinegar and then all the dry ingredients. Bake at 180°C for 30-40 minutes. Once it cools, demould.
- For the ganache, melt both together in a microwave at 30 second intervals. If you’d like, you can add 50 ml whiskey to the ganache as well once you’ve mixed the hot cream and chocolate together.
- Cover the cake with the ganache, you can also layer the cake by slicing it horizontally from the middle and adding ganache. Once done, let it chill till you’re ready to serve.
- Pour the whiskey over the cake and light it up. You can also pour the whiskey in a bowl, light that up first and then pour it over the cake.

Recipe Name: Chocolate Fondue
Ingredients:
For the candy cane cookies:
- 1/4 cup softened butter
- 1/3 cup white sugar
- 1 tbsp milk
- 1/2 tsp peppermint extract
- 1/4 tsp vanilla
- 1/2 cup + 2 tbsp all purpose flour
- 1/4 tsp baking soda
For the chocolate fondue:
- 1/2 cup milk
- 1/4 cup cream
- 1/2 cup dark chocolate
- Cornstarch slurry (1/2 tbsp cornstarch + 2 tbsp water mixed)
- Pinch of salt
Fruits and sweets options for the plating:
- Marshmallows
- Strawberries, Bananas, Grapes, Oranges, Apples
- Brownie bites
- Wafers
- Candy cane cookies (can’t miss)
Method:
- For the cookies, whisk the wet ingredients till light and fluffy
- Mix in the dry ingredients
- Divide the dough into 2 portions
- To half the dough: add 1/4 tsp red food colour and mix
- Chill both of them covered in the fridge for 60 min atleast
- Take small portions of the doughs and roll them into logs
- Intertwine and shape into a candy cane
- Chill for another 15 min
- Bake at 180°C for 7-11 min in a preheated oven depending on the size of the candy canes: larger ones take more time while smaller ones take less
- Let them cool completely
- For the chocolate fondue, heat up milk and cream
- Add in the dark chocolate and whisk on low heat till completely melted
- Add in the cornstarch slurry and mix till you reach your desired consistency
- Add it to the fondue pot and let it sit on low heat

Recipe Name: Eggless Churros
Ingredients:
- 1 cup water
- 2 tbsp sugar
- 1/2 tsp salt
- 2 tbsp oil
- 1 cup all purpose flour
- Some caster sugar and 1/2 tsp cinnamon powder for coating
Method:
- To make the dough, in a pan add water, sugar, salt, oil and bring to a boil.
- Take it off the heat and add the flour.
- Mix it well to form a smooth dough and let it cool for sometime.
- To make the churros, transfer this dough into a piping bag with a large star tip and pipe out the churros on a butter paper.
- Fry them on a low to medium flame until crispy and golden brown.
- For the coating, mix half cup of caster sugar and 1 tsp of cinnamon powder in a plate and coat the fried churros
- Serve them hot with chocolate dip and hot chocolate and enjoy!

Recipe Name: Mulled Wine Hot Chocolate
Ingredients:
For Mulled Wine:
- Red wine (Merlot/Zinfandel) -300 ml
- Orange ½, sliced
- Cloves – 3
- Cinnamon sticks – 2
- Star anise – 2
- Brown sugar – 1 tablespoon
For Hot Chocolate:
- Milk – 1 cup
- Fresh cream – ½ cup
- Brown sugar – 2 tablespoons
- Cocoa powder – 1.5 tablespoons
- Dark chocolate—½ cup, chopped
- Salt – a pinch
For Garnish:
- Whipped cream
- Chocolate flakes
- Orange zest
Method:
- In a saucepan, combine red wine, orange slices, cloves, cinnamon sticks, star anise, and brown sugar. Bring to a boil, then simmer for 10 minutes to infuse the flavors. Strain and set aside.
- In another saucepan, heat milk, cream, and brown sugar until it begins to simmer.
- Whisk in the cocoa powder and allow the mixture to come to a boil.
- Lower the heat and stir in the chopped dark chocolate and a pinch of salt. Whisk until smooth and glossy.
- Remove the orange slices and spices and gently mix the prepared mulled wine with the hot chocolate.
- Pour the mulled hot chocolate into a tall glass.
- Top with a dollop of whipped cream, garnish with chocolate flakes, and finish with a sprinkle of orange zest.
- Serve warm and enjoy this festive treat!

Recipe Name: Strawberry Pudding
Ingredients:
- 20 Marie Biscuits
- 1-2 tbsp melted butter
- 4-5 scoops vanilla ice cream
- 4-5 strawberries for puree and some fresh chopped strawberries
- Chocolate for garnishing (optional)
Method:
- With a belan or grinder, coarsely crush 20 Marie biscuits
- Add this to a bowl along with 1-2 tbsp melted butter. You should be able to bind it.
- Then pour this onto a dish & spread it evenly & freeze for 10 mins
- Now melt vanilla ice cream (4-5 scoops)
- In a blender, blend 4-5 strawberries (without the stem)
- Combine the melted vanilla ice cream & puréed strawberries
- Pour this over your biscuit crust & freeze for a couple of hours or overnight
- Once done, cover with lots of freshly chopped strawberries, some chocolate (optional but the combination is fabbb) & enjoy!

Recipe Name: Oats and Cranberry Cookies
Ingredients:
- Flour 225 gm
- Salted Butter 180 gm
- White chocolate chunks 150 gm
- Brown sugar 100 gm
- Castor sugar 80 gm
- Oats 60 gm
- Cranberries, dried 50 gm
- Baking soda 5 gm
- Boiling water 30 ml
- Vanilla essence 5 ml
Method:
- In a large bowl add in room temp butter, brown sugar, white sugar, vanilla essence and whisk till sugar is combined
- Now add in the boiling water along with baking soda, and whisk again.
- Add in the flour, oats, cranberries, white chocolate chunks and bring it all together.
- Now make equal sized balls out of it and place it on a parchment paper .
- Bake at 180 C for approximately 20 mins.
- Let it cool and enjoy.
