Bichhubooti Saag
The preparation of Bichhubooti Saag requires careful handling due to its stinging properties. The leaves are plucked cautiously using gloves or tongs to avoid skin irritation. Once collected, they are thoroughly washed with clean water to remove any dirt or impurities. The leaves are then boiled in a pressure cooker or an open vessel, which helps eliminate their burning sensation. After boiling, they are ground into a fine paste using a mixer or a traditional grinding stone.
To enhance the flavour, mustard or desi ghee is used for tempering, and gram flour or rice flour is added to improve the texture and taste.
