Appetizer: Lasagna
Ingredients:
For the Roasted Vegetables:
- ½ cup red capsicum, cubed
- ½ cup green capsicum, cubed
- ½ cup deseeded tomato, cubed
- 1 tbsp olive oil
- 2 tsp garlic (lehsun) paste
- 1 tsp dried oregano
- Salt to taste

Additional Ingredients:
- 1½ cups white sauce
- 1 cup pizza sauce
- 4 cooked lasagna sheets
- ¼ cup grated processed cheese
Instructions:
Roasting the Vegetables:
- Heat olive oil in a large non-stick skillet. Add garlic paste and sauté for 30 seconds over medium heat.
- Add the red and green capsicums along with 2 tablespoons of water. Cook over low heat for 2–3 minutes, stirring occasionally.
- Add the tomatoes, oregano, chili flakes, and salt. Stir well and cook for 1–2 minutes over medium heat. Set aside.
Assembling the Lasagna:
- In a large non-stick skillet, combine the roasted vegetables with the white sauce. Stir well and cook over medium heat for 1 minute. Set aside.
- Spread ½ cup of pizza sauce evenly over the bottom of a baking dish. Place two lasagna sheets over the sauce.
- Spread the roasted vegetable mixture and ¼ cup of pizza sauce evenly over the lasagna sheets. Cover with two more lasagna sheets.
- Spread the remaining ¼ cup of pizza sauce over the top and sprinkle grated cheese evenly.
- Bake in a preheated oven at 200°C (400°F) for 8 minutes, or microwave on high for 2 minutes.
- Serve hot with garlic bread.
Main Course: Nasi Goreng
Ingredients:
For the Rice:
- 2 tbsp oil
- ½ cup thinly sliced onions
- 2 tsp grated garlic (lehsun)
- 1 tsp finely chopped fresh red chilies
- ¼ cup finely chopped celery (ajmoda)
- 3 cups cooked rice
- ½ cup julienned carrots
- ½ cup finely chopped French beans
- 1 cup shredded cabbage
- Salt to taste
- ¼ tsp freshly ground black pepper (kalimirch)
- 2 tsp soy sauce
For the Paste:
- 1 cup roughly chopped tomatoes
- 1 tsp coriander (dhania) seeds
- ½ tbsp roughly chopped garlic (lehsun)
- 1 tbsp roughly chopped fresh red chilies
- 6 almonds (badam)
For Garnishing:
- 2 tbsp finely chopped spring onions (whites and greens)
Instructions:
- Heat oil in a large non-stick skillet. Add celery, garlic, onions, and red chilies. Sauté for 2 minutes over medium heat.
- Add the prepared paste and cook for another 2 minutes, stirring occasionally.
- Add the carrots, French beans, cabbage, and salt. Sauté for 2 minutes over medium heat.
- Stir in the rice, soy sauce, and black pepper. Mix gently and cook for 2 minutes.
- Garnish with chopped spring onion greens and whites. Serve hot.
Dessert: Brownie Muffins
Ingredients:
- ½ cup chopped dark chocolate
- 3 tbsp butter
- ½ cup condensed milk
- 1 tsp vanilla essence
- 1 cup plain flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ cup chopped walnuts (akhrot)
- 9 dark chocolate cubes
Instructions :
- In a large non-stick skillet, melt the butter and dark chocolate over medium heat, stirring continuously for 2 minutes.
- Transfer the mixture to a deep bowl and let it cool slightly. Stir in the vanilla essence and condensed milk.
- Gently fold in the baking powder, baking soda, and plain flour. Mix well, then add the chopped walnuts.
- Divide the batter evenly among nine muffin tins. Press a dark chocolate cube into the centre of each muffin.
- Bake in a preheated oven at 180°C (360°F) for 15 minutes. Serve warm.
