“I love having anchovies at the start of a meal,” says Chris. “You can buy butterfly ones from specialist suppliers such as The Tinned Fish Market. Sudachi is closer to a lime than a lemon in flavour, but has floral notes that you can find in an Amalfi lemon. If you can’t source sudachi, then an Amalfi lemon or very good quality lime would work as a substitute.”
